Enniscorthy woman set to launch her new coffee van business

There will be a welcomed addition at this weekend’s Enniscorthy Farmers Market.…

One of the traders at the Enniscorthy Market will be celebrating the launch of her brand new coffee van. The distinctive pink van is called Cosy Cup by Dessert Delights.

Owned by Linda Kelly, she will be officially opening and launching their new coffee van business this Saturday, June 7th 2025.

They will be opening from 9am until 2pm. The van will be set up at the Enniscorthy Farmers Market for the duration of the market.

Opening a coffee van business might seem like an easy task. But, comparison videos on its progress highlights the extensive work that she placed into renovating the van before their eventual launch day. Catching up with Linda, she told Wexford Weekly that:

“I’m running it by myself at the moment. It took about two months to get the van ready. This was hard but enjoyable too. There was a lot of time placed into it,” she said.

Meanwhile, Bell Fortune from the Enniscorthy Farmers Market told Wexford Weekly that the new addition nestled within the market will help to create a perfect ambiance.

“The cosy cup van is all about quality coffee, sweet treats, and a warm, welcoming vibe. It’s perfect for anyone looking to sip something special while enjoying the market atmosphere,” she said.
